So… I hate a lot of really healthy foods, and Bok Choy is not an exception. However, I will eat it, only, and only because it’s so healthy that it’s crazy.

First of all it’s known for helping to prevent some cancers(colorectal, breast, prostate, & lung), it’s also known for reducing the risk of cataracts. It’s great for hair growth (especially if you’re losing hair), it’s high in fiber (this aids in digestion). It has calcium, manganese, and potassium; along with vitamins A,C, and K. It helps regulate blood pressure, it’s low calorie and zero-fat.

And actually. I very much enjoy eating the stem, a lot more than the leaves, but the leaves are healthier… go figure.

Granted, do not binge on this, and don’t always eat it raw, and remember to wash the damn thing. It grows in the ground it’s bound have dirt in it. Just rinse it with water and you’re good to go. Lots of people love bok choy… not me so much, but it’s sooo healthy and with my terrible eating habits and my bad eye sight and my unknown family health history… might as well… I try to eat it about every other week at minimum.

Apparently there’s some healthy food index thing, it scores a vegetable by how many nutrients it provides and bok choy is one of the top foods. So like I said, I might not like it (and I’m sure that’s because I don’t really know many ways to cook it) but it’s so healthy it’s crazy.
